Palm Civet

The Asian Palm Civet helps produce the most expensive coffee in the world. This cat-like creature, native to Indonesia, Malaysia and other countries in the region, selects and swallows the highest quality coffee beans. The civet only digests the outer coating. Workers then collect the seed from its droppings. Digestive enzymes in the civet alter the flavor, producing “deep, chocolatey undertones” highly prized by coffee enthusiasts.
